Now that Fall is settling in nicely. I love this time of year. The leaves have already started to turn, the aroma of burning leaves, and of course football. One of my favorite fruits to enjoy in the Autumn season is apples. I love just about all of them. My new apple love is the Honeycrisp apples. Honeycrisp apples are a cross between Macoun and Honeygold apples and are very juicy.
I discovered this apple three years ago. My husband and I were on our way home from the shore and stopped at a local fruit stand. We both had never heard of them and decided to give them a try. We were no sooner out of the parking lot and hubby had already dived into one. He loved the tangy sweet juicy taste of them and I immediately had to try one for myself. They were yummy. Now every year we buy Honeycrisps. In the beginning they were hard to find, but now that their popularity has grown you can get them just about anywhere. They are not cheap. Normally they go for about $2.99 a pound. We did just buy 10 for less than $14 at Costco.
Since I now have ten of them, I thought why not try them in a smoothie. I searched online and found a few and took some notes here and there to see what most consisted of. I did not find one that had kale in it though, so I decided to make my own. The kale goes virtually unnoticed!
- 1 honeycrisp apple
- 3/4 cup almond milk
- 2 tablespoons of chia seeds
- 1 tablespoon of maple syrup
- handful of baby kale
- 1 cup of ice
- 1/2 teaspoon cinnamon
- pinch of nutmeg
- Core and cut up the apple. (I just used an apple cutter.) My blender (Vitamixer) can handle
- the skin, I left it on to get the extra fiber boost. (If your blender can not cut up the skin then I would recommend removing it.) But all the ingredients in the mixer except the ice. Blend until smooth. Add ice and blend some more. Enjoy!
