Who doesn’t like brownies? They are moist, chewy, chocolate bliss! If I had to pick one thing that I don’t like about them it would be the calories, refined sugar, and high unhealthy fat that come with them. (OK that was more than one.) The average homemade brownie has about 325 calories, 16 grams of fat, 2 grams of fiber, and 37 grams of sugar. Ouch! Let’s face it, we are eating more than one serving at a sitting too. I needed to find a new better-for-me recipe and fast!
Along came this recipe for no bake brownies and I had to give them a try. Making them was so quick and easy too. And boy are these little nuggets delicious! Best part is they are no bake so they perfect to make on a hot summers day like today. Who wants to turn on their hot oven when the heat index is going to feel like 100 degrees?
I got the recipe idea from Julie Morris’s Superfood Kitchen but altered it slightly to my liking. These bites will save you calories, time, and satisfy your chocolate craving. They might be tempting to eat in one sitting, but like everything you still need to eat them in moderation. I like to enjoy one as dessert after lunch. I hope you relish in them as much as I do!
- In a food processor (my vitamixer did not work as well) chop up the nuts real fine like a powder or until they are of the desired consistency. While processor is running slowly add the dates one at a time. Next add the cacao powder and salt. Mix until it becomes like batter. I normally have to add about 1-2 tablespoons of water if the batter seems a bit dry and not mixing well. Once the ingredients are well blended roll them into one inch balls.
- Optional - Put the cacao nibs in a bowl and roll the brownies into the cacao nibs.
- You can substitute regular cocoa in place of the cacao powder and chocolate chips in place of the nibs, but remember doing so will make them less nutritious. I use all raw ingredients when I make mine. Also the pecans and be exchanged for any nut.
- On average one of these brownies are 132 calories, 7 grams of fat (1 gram saturated), 3 grams of fiber, and 13 grams of sugar.
